On the spur of the moment, I baked these oats chocolate chip biscuits with date palm jaggery. I liked the distinct flavor of the jaggery. Date palm jaggery is commonly manufactured in West Bengal and Jharkhand regions of India. You can replace it with normal jaggery / brown sugar / honey / maple syrup.
This recipe is quite easy to go with and the biscuits turned out super flaky.
INGREDIENTS
Makes 12-15 small biscuits3/4 cup dat e palm jaggery, melted
1/2 cup clarified butter, desi ghee
1 tsp vanilla essence
3 cup rolled oats
1/2 cup chocolate chips
METHOD
Take a deep bowl, add butter, melted jaggery and mix well. Add vanilla essence and mix.
Add rolled oats to the bowl and mix well such that oats are evenly coated with the wet ingredients. In the end, add chocolate chips and toss well.
Set them into a desirable shape and bake in a pre heated oven at 165C for 20 minutes. Let them cook down before shifting from the baking tray.
