I have this fond memory from my childhood days of preparing masala tea, all the way from adding tea powder / leaves in the boiling water, to adding cardamoms and cloves, and finally adding milk, it was all joyful. I have never taken a measurement for any of the ingredients while cooking. The only exception here is sooji ka halwa (semolina pudding), which has a customary 1:1:1:2 ratio. Don't worry, I will definitely share the mystery behind the halwa ratios. My cooking style has always been instinctual. In fact, whenever I have precisely measured the ingredients, it always ends up with me ordering out the food later. There are times when I wipe my plate clean and I don't remember the ingredients a few weeks later. Does this happen to you also?
The kitchen of every house that I have lived (in all these years), has always held a special place in my heart. Over the years, I have observed my mother, relatives and friends digging into the corners of their kitchen closets for their secret ingredient and cooking their favorites. This habit of keen observation has helped me to develop a sense about the ingredients that goes into creating the magic. Every kitchen has its own flavors and aromas, every house has its own taste. I bring this platform to you where I will share my kitchen adventures and all the roller coaster rides that I have taken in creating these recipes.
Being raised in a Punjabi household, food has always been my first love. My all-time favorite dish being Chole-Bhature. Currently I live in Bangalore with my husband, a Bengali. Some of the perks of being married into a Bengali household, I get to relish Bengali delicacies at home. Also, Bangalore has brought other different cuisines on my platter. There are days when I'll be preparing chole-bhature for breakfast, and other days I'll be cooking Pesto Spaghetti Pasta for dinner. The journey of exploring dishes will always be a part of my life.
