This cookie is not a fix for mid night cravings but it definitely compliments well as an evening snack to go along with your tea.
For a change, the distinct flavors of cardamom and coffee blends pleasantly well. On the whim, I tried out these cardamom and coffee flavored cookies and the result was quite satisfactory. You can use any instant coffee available in your pantry. The quantity can vary as per need, though I have tried to keep the flavors moderate.
INGREDIENTS
Makes about 12-14 small cookies150gm whole wheat flour
60gm clarified butter (desi ghee)
75gm brown sugar
1 tsp baking powder
1 1/4 tsp (~4gm) instant coffee, mixed in 1 tsp hot water
3/4 tsp (~2gm) cardamom powder, seeds only
1/4 tsp salt
1 tsp vanilla essence
30ml milk, room temperature
METHOD
Whisk flour, baking powder, cardamom powder, salt in a bowl and set aside.
In a separate bowl, cream together butter and brown sugar until combined well and then stir in the vanilla essence and coffee/water mix.
Now add the dry ingredients to it in two halves until no lumps remain. Add milk as per requirement. The dough should be soft but thick enough to avoid spreading while baking.
For the extra punch, I have added a pinch of coffee granules to the batter.
Cover the dough and let it chill in the refrigerator for 2-3 hours. Take out the dough and allow it to soften for about 10 minutes at room temperature.
Roll out the dough into small balls and flatten with a spoon on the baking tray. Bake at 180C for 12-14 minutes.
