A different way to incorporate bottle gourd in your diet. Here, I have also added mashed avocado along with grated bottle gourd and other spices to the dough. I have added a few spices that goes well along with bottle gourd and avocado.
INGREDIENTS
2 cup whole wheat flour
1/2 cup ripe avocado (roughly 1/2 medium sized avocado), mashed
1 cup bottle gourd, grated
2 green chilies, chopped
1 small onion, finely chopped
1 inch ginger, grated
Salt to taste
1/2 tsp black pepper powder
1/4 tsp jeera (cumin seeds)
1 tsp desi ghee
Warm water, to knead the dough
Ghee to fry parathas
METHOD
For the dough
In a bowl, mix grated bottle gourd, mashed avocado, onion, green chilies, ginger, jeera, black pepper powder, desi ghee, salt and mix well. Now add flour to the mixture. Add water in small quantity as first to bring together the ingredients. Add more water if required and form a soft dough.
Cover with a muslin clothe and keep aside for about 30 minutes.
For making parathas
Take a handful of dough and make small balls. Dust flour on the surface and using a rolling pin roll the balls into rotis of about 7-8 inches. It should a bit thicker than a roti.
Put the paratha on a hot tawa and cook on medium flame for about 1-2 minutes. Flip sides, meanwhile apply ghee and cook till light brown.
Serve hot as it is or with some pickle, curd, and/or butter.
